I will be playing on a long map (2 maps connected top to bottom) and facing Germany. The best unit he could possibly field is a king tiger (and he probably will). He has a pretty decent airforce, so-so amount of infantry. He doesn't have a ton of light or medium tanks, but he has a couple good ones like the elite panzer and ss panzer iv. I have very limited experience with USA forces... I am pretty sure the second option is the better of the two, but I still want opinions.

I dont really know what you define as 'not so much' infantry, for your opponent. If he really lacks the stuff, just pour in with the infantry. Slip in a few (UK, granted) Engineers, and that King Tiger will not sit easily on any objective.

Opinions :
I dont like how you completely ignore the Air game. Your Ammo dump is up for grabs and if your opponent fields a fighter. If he fields a Stuka your tanks will have trouble. A few Quads do great service doubling as machineguns at the same time. Highly recommended.

The Pershing is fun only if your enemy doesnt field a Wehrmacht Expert Sniper or a Veteran Tiger. Both make him obsolete, forcing you to play a more infantry like game. If he does, just replace the army with something less tank oriented. With a King Tiger life is still hard, but at least you have a fair chance.

It's funny you say that, as I almost always use aircraft (I'm the UK or Germany generally). His aircraft, when he uses them, usually fail.

That option 3 is a pretty solid idea, though the easy eight is one of my favorite units and he loves snipers. The hardest part for me finding a balance, because I know he'll field something I need a heavy hitter for, and that means I need 2 heavy hitters so 1 doesn't become an instant target.

I've had good luck using standard infantry to guard my ammo dump up to this point. No matter what I use to protect it, a single attack can still wipe it out anyways. Specialized units for the most tend to end up worthless or targetted and destroyed.

I could always trade the US infantry platoon for an F4U Corsair straight across, but that platoon altogether probably has better odds of taking out a plane than the F4U does.

This could fully backfire, but another option is to take 2 heavy hitters (as I know he only has the 1 king tiger to fill that role)... Everything here hits pretty hard, but it is a really risky force, however, it wouldn't easily be wiped out in a deathmatch.
